BLACK BEAN AND CORN SALSA



I love salsa.  I love making and canning my own salsa.  It is one of the easiest things to can.  Better yet there are so many different types of salsa you can make.  

I can 2 different kinds of pineapple salsa, normal zesty salsa, 2 different kinds of peach, apple salsa and black bean and corn salsa.  My far my favorite is black bean and corn salsa.  You can do so much with this salsa.  You can put it with chicken and taco seasoning in the crockpot, you can use it for quesadillas or just eat it with chips.  

Friday I opened up my last jar of this salsa.  Which meant I so had to make more today.

Add tomatoes to a large saucepan



Then add onions, jalapenos, green pepper, black beans, corn, and garlic




Add cumin, canning salt, vinegar, and pepper




Add tomato sauce 



Add tomato paste


Stir all together, bring to a boil and simmer till you get the consistency you enjoy



BLACK BEAN AND CORN SALSA

Ingredients

  • 8 cup skinned and diced tomatoes
  • 2 cup fresh corn cut off the cob
  • 2 cans of black beans rinsed and drained
  • 2 1/2 cup diced onions
  • 1 cup diced jalapeons
  • 1 1/2 cup diced green pepper
  • 8 minced cloves of garlic
  • 2 teaspoon cumin
  • 1 teaspoon black pepper
  • 1/2 cup vinegar
  • 2 tablespoons canning salt
  • 1 15-16 oz jar of tomato sauce
  • 12 oz tomato paste
Directions
  • Add all ingredients and bring to boil, reduce heat to simmer and allow to reduce to the consistency you like
  • Sterilize pint jars
  • Ladle into jars and put rings and lids on
  • Water bath can for 20 minutes
