GARLIC ROASTED POTATOES


As I was making the Italian Meatloaf today, I decided to make garlic roasted potatoes.  Of course, I cook stuff I like or love.  Since I love garlic and I love these potatoes I thought they would go well with the Italian meatloaf.  I have to admit I was totally correct, this rocked with the meatloaf. 

I make these a lot just because they are easy and a great side dish for almost any meal.  Plus for some reason, I think you are supposed to have some type of potatoes when you eat meatloaf.  Normal meatloaf I have to make garlic mashed potatoes.  I just did not like the idea of mashed potatoes for this recipe so I opted for these instead.

I picked up several bags of mixed new potatoes the other week at Lidl because they were super cheap.  Come on when you can get a bag of red, purple and new baby potatoes under a dollar that is a deal.  They normally run upwards of $4.  Since I still had a few bags I decided to use these potatoes but you can use about any kind you would like.  If I use Russet, Yukon Gold, or large red potatoes, I normally slice them.  However, if I am using new or baby potatoes I dice the larger ones and half the others.  

All you have to do is start with some butter and minced garlic in a small saucepan.  I keep a large bag of pre-peeled garlic in my fridge and I also keep several bulbs of garlic on hand. 



While this cooks I slice or dice the potatoes.  I normally always use foil to form a bag because this helps steam the potatoes in the oven, making them nice and tender.


I like to pour about a tablespoon of olive oil on top of the potatoes.


Pour the garlic butter on top of the potatoes.


A bit of salt and pepper.


Form a foil pack and cook.  


After about 45 minutes, I open up the foil pack in order to broil the to a nice crispy crust.



GARLIC ROASTED POTATOES

Ingredients

  • 2 to 3 pounds potatoes
  • 2 to 3 tablespoons butter - melted
  • 1 tablespoon olive oil
  • 5 cloves of garlic
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
Directions
  • Preheat oven to 400 degrees.
  • Melt butter in a small saucepan.
  • Mince garlic cloves and put into a saucepan, cooking for a couple of minutes.
  • Slice or dice potatoes.
  • Cut off enough foil to form a packet for your potatoes and put potatoes on to foil.  
  • Add olive oil and butter garlic mixture to the top of the potatoes.  
  • Sprinkle potatoes with salt and pepper.
  • Close up the foil packet and cook for 45 minutes.
  • After 45 minutes, open up the foil packet and put under broil high until golden brown.
