THE BEST KEY LIME PIE EASY MAKE RECIPE

I have to start off with an apology.  I apologize because I had tons of pictures and some way I have lost all but one.  Which means I just need to make another pie so I can have pictures.

I love Key Lime Pie.  I feel totally head over heels for this pie while on vacation in Outer Banks, NC.  To be precise Avon, NC.  I do not remember the name of the seafood joint but I do remember it was very expensive and you did not get a lot but looked like a hole in the wall.  I will admit though the food was amazing.  Plus it is a good thing that the serving size was small because it left room for dessert which never happens.  

The pie I had there was not really pretty.  The homemade graham cracker crust was uneven and it had quite a bit of homemade whip topping but it was amazing.  So, amazing that the next time I dropped by for a piece to go and they had sold out.  That is when I found out someone on the island makes them for this restaurant and they sell out quickly.  Needless to say, the next day I was there about the time the opened for the evening. 

This was years ago when my kids were small.  Still in elementary school.  Since then I have learned to make them myself.  Key Lime Pie is by far my favorite dessert.  I love the tartness of the key lime juice and the sweet flavor of the whipped topping.  

This recipe is so darn easy.  You can make it with a pre-bought graham cracker crust or you can make your own crust.  I do both depending on how much time I have.  I still prefer to make my own crust.  


Here is a pie with a pre-made crust. 




KEY LIME PIE 

Ingredients
  • 3 egg yolks
  • 1/2 cup key lime juice
  • 1 can sweeten condensed milk
Directions
  • Whip egg yolk for 2 minutes with a whisk or mixer.
  • Add sweetened condensed milk and mix another 3 minutes.
  • Add key lime juice and mix well.
  • Pour into a pie crust and cook at 352 degrees for 10 to 15 minutes.
  • Take out of oven and allow to cool for at least an hour.
  • Top with whipped topping.
As I mentioned you can use a pre-made graham cracker crust or make your own.  If you wish to make your own his is the recipe.

GRAHAM CRACKER CRUST

Ingredients
  • 10 to 11 full graham cracker cookies.  
  • 5 to 7 tablespoons melted butter
  • 1/8 cup sugar
Directions
  • Break/crush graham cracker cookies into crumbs.
  • Melt butter and add to crumbs and sugar.  Blend very well.
  • Place the graham cracker mixture into a 9-inch pie plate and push down to form a crust.
  • Cook Pie crust for 10 minutes in a preheated 350-degree oven.
  • Allow to cool before adding pie filling.

You can buy whipped topping but please do not waste your money and add cool whip.  Or you can make your own.  Just buy a box of heavy whipping cream and follow the directions.
