PARMESAN BAKED FISH
Sorry, I have not posted much in the last week or so. We were gone on vacation. Yes, we had a blast. Nothing quite like getting away for a week. Now, it is time to get back to business and to work.
While in the keys we did a bit of fishing which got me wanting fish for dinner. Plus I am trying to eat stuff from the freezers since we had one go out on us right before we left. Boy, that was a nightmare. It still is because all of the contents of that freezer is at a friends house in their freezer. We need to purchase a new one. It is upsetting because the freezer that died on us is only a few years old.
This recipe was given to me by someone when I visited Key Largo about 10 years ago. Since we were just there I felt it is only fitting to post this recipe. Sandy, the person that gave me the recipe said she was given this recipe by a chef at an upscale seafood restaurant in Miami. I have to admit it is an excellent dish to prepare. When she made it for me years ago she used grouper that we caught while fishing with her husband in the gulf stream off of Key Largo. It would be good with about any white flaky fish you wish to use.
For this recipe I used tilapia. Again I chose it because I had some in the freezer and does well with this recipe.
I have to apologize while putting this together I did not take any pictures. I was trying to do too much at one time. I have marinara going from homegrown San Marzo tomatoes, was preparing my husband's lunch for tomorrow, and making him steel cut oats for his to go breakfast for the next couple of days. I got a bit carried away and totally forgot to take my preparation pictures. I am sure I will be making this again soon so I will post pictures for you the next time.
PARMESAN BAKED FISH
Ingredients
- 1 pound of fish
- 1/3 cup olive oil mayonnaise
- 1/2 of a small onion
- 1/4 shredded parmesan cheese
- 1/2 teaspoon Old Bay Seasoning
- 1/4 teaspoon ground black pepper
Directions
- Preheat oven to 400 degrees
- Dice onion and sautee in a small pan, allow to cool
- Combine all ingredients. This will form a paste.
- Spread mixture over fish fillets
- Bake for 10 minutes then put on broil and cook for another 1 to 2 minutes to brown fish
If you are running short on time you can cook your onions in the microwave for a couple of minutes. You can even put together the paste mix ahead of time to use later in the day. Another hint is to use freshly grated parmigiano-reggiano. This really ups the quality of the dish. I have 2 favorite ways of cooking fish at home and this is one of those two. This dish is also low carb but if you wish you can add some panko or breadcrumbs to the top. I do not because I do not see that it needs it and the original recipe that was given to me did not include panko or breadcrumbs.
