HAITIAN IN A JAR~PIKLIZ~A TASTE OF THE ISLANDS

OHHHHHHHHHHHH MYYYYYYYYYYYYYYYYY!!!  OH MY! Oh yeah, girl (Miss Natalie), I am so stealing Red's words.  By the way, Natalie is like this awesome Yankee girl that has a touch of Southern about her.  She fits right into this crowd 'round here. If you have not figured it out, I love a good story.  Which I am sure goes back to my daddy.  He could tell a good one.  One day I might try to post one of his favorite story he use to tell us.  But.... in the meantime. Who has ever heard of Pikliz? I mean let's think about this.  I am from a small rural area.  Pretty sure no one here has heard of this delectable dish.  Same goes for where I live now.  I do not live in a large city.  I just happened on this awesome site a few years back.  I have no clue what I was searching for but oh goodness does this dude have a great blog.  I do remember that summer we had our first crop of Scotch Bonnet peppers..... CREAMY ITALIAN SAUSAGE WITH PENNE PASTA

This was dinner last night.  We had an issue with the fridge the other day and we had to use some food in the freezer because of thawing.  I normally do a marinara Italian sausage dish but decided to use the heavy cream so it would not go bad and make a parmesan garlic sauce to go with the Italian Sausage.   I make a similar recipe with chicken.  Click  here  for the recipe.  Start by browning the Italian sausage. Add mushrooms and saute a little longer. It should look like this when done. Cut some sun-dried tomatoes into small pieces. Throw them into the sausage mixture. Make the cream sauce.  Add garlic, parmesan cheese, white pepper into a pint of heavy cream.  Add 1 cup of half and half and allow all of this to slowly warm so that the cheese melts.    The cheese will thicken the sauce. Boil pasta and drain.  Add the sausage mixture and pasta into a large bowl to combine. Add the cream sauce.

OLD FASHION SOUTHERN PEACH COBBLER

Peach cobbler was one of my dad's favorite desserts.  When my kids were little and he would come down for dinner (lunch) on Sundays I would try to have something sweet for him.  He loved his sweets after dinner.   Cobbler is so quick to make and so good.  I love it in the summertime, warm from the oven with a scoop of vanilla bean ice cream.  You take about good.  Scott and I have our disagreement on what cobbler is.  I grew up with what I call a Southern cobbler.  He makes something that no one in the South would call a cobbler. Start with melting one stick of butter.  I do this in the dish I am making the cobbler in as I preheat my oven.  I do need to apologize this was made for a birthday dinner where Scott works.  So it is in a foil pan. While the butter is melting make your batter.  Add sugar, flour, baking powder, and salt together. Add milk Add  vanilla and mix together to form a batter. Pour the batter into your baking dish.

YUMMY STRAWBERRY LEMONADE CAKE

I have wanted to make this recipe for years but for some reason I have not.  Probably due to the fact we never really eat sweets around our house.  A few weeks back Aldi had strawberries on sale and I bought a few too many packages.  I hate things to go to waste.  If I had been healthy that thought would not have been on my mind but I had been sick with a couple of colds for about a month and my body was really run down.  We were due to go to a friend's house for the evening so I decided why not make this recipe.   Hull and wash your strawberries. Puree your berries and squeeze your lemons. In a large bowl combine sugar and oil. I used my stand up mixer but you can use a whisk to combine. Add  vanilla  to the sugar mixture. Crack eggs. Add eggs to the sugar mixture. Add the strawberry puree. Blend well. Add flour, baking powder, and salt in a smaller bowl and mix together. Add dry mixture to the

SOUTHERN COUNTRY STYLE STEAK

This is total comfort food at it's best.  I grew up eating this meal and I cooked it for my children.  For the longest time, it was one of my son's favorite meals. This is also a Southern thing.  I did not realize that it was until I fixed this a few weeks back for my husband.  He ate it and instantly told me how good my Salisbury steak was.  Hmm, no, it is not Salisbury steak.  Do not get me wrong I love a good Salisbury steak and I happen to have a tasty  recipe  for it but this is an entirely different meal.   I actually had no clue that this was a regional entree until Scott said that.  It was kind of funny because so proceeded to tell several of our friends about me making this great dish with cubed steak and gravy.  He was all excited about telling people but no one quite got it because, like me, they grew up with this being cooked at home.
