HOW TO CAN CHICKEN AND WAYS TO USE IT

Have you ever heard of canned chicken?  You can buy a can of chicken at the store.  Well, I like to can my own chicken.  Are you asking why would you can chicken?  On almost all of my canning posts, I have hit on this before.  Why I can, especially when it is something that as cheap in the store.  I personally love to can stuff.  I enjoy knowing where my food comes from and just exactly what I put in it.  You have no clue what you are eating when you open a jar of something you purchased from the store.   I have been canning all kinds of meat for a while now.  I love the fact I can open up a jar of canned meat and make a meal really quick.   In this day and age where our world has gone a bit crazy, it is nice to know I can put stuff up for later that is much healthier than what I can buy at the grocery store.   Anytime I see chicken on sale I buy it.  So, when I found boneless skinless chicken breast on sale for .89 a pound, I just could not pass it up.  Our freezers are full

HEALTHY HOMEMADE GRANOLA

I needed to make some granola today and I decided to play around and try to cut some of the sugar from the normal  granola I make that happened to come from my dear friend Pam.  That is why it is named Pam's Granola.  Do not get me wrong her recipe is to die for and I have been making it since I posted the recipe but Scott and I have been trying to cut more sugar from our diets. Granola is super easy to make and only takes about 30 to 40 minutes to finish and most of that is time in the oven.  It only takes a few ingredients too.  It is a fun thing to make and kids love to help make it.  One of my friends precious little girl loves to come over to my house and help me cook.  So, Miss Abby, next time you come we need to make this for you to take home.   I have been sick off and on for about 2 weeks and I kept on putting off making this.  I always forget how quick and simple it is to toss together.   Start by getting a large mixing bowl and adding the oats. HOMEMADE ELDERBERRY SYRUP RECIPE

I tried really hard not to catch Scott's cold, but alas, I started coming down with this junk yesterday.  Head and ears clogged up, throat sore, and my glands are swollen.  Overall I feel rather yucky.  I have been up since 2:23 am and I do not see me going back to sleep.  I have been using my peppermint and eucalyptus essential oils but I need something stronger.   FYI I am on my second cup of coffee.  Me, with 2 cups of coffee will be interesting because I rarely drink a whole cup and even more rarely do I drink coffee daily.   As I was laying in bed feeling quite miserable I kept on thinking about my stash of dried elderberries I purchased a few weeks back to make Elderberry syrup with.  I have never made syrup but we do make wine with elderberries we pick that grow wild near our house.  Unfortunately at 4 am it is not the time to make me some elderberry syrup.  Scott tells me I am too loud, so the last thing I want to do is wake him up.  Note, elderberries cannot be eaten

I made  Rose water  back in May and since then I have been reaping the benefits.  With winter in full force and as I skin turns to ash, I have turned to rose water.  In doing so I thought why not share with you guys some of the benefits in using rose water.  After all the beautiful Cleopatra used this in her beauty routine.  How can one go wrong? WHITE CHICKEN SPINACH PIZZA

We finally had the time and the people over to make a couple White Chicken Spinach Pizzas.  I have to say it was a bit hit.  Which always makes me happy.  I can not help but get a bit apprehensive when I am cooking for my friends.  Not everything is good and I do make some stuff I would never make again or at least if I did I would figure out how to make it better.   Doesn't that look delicious?  Homemade pizza pie crust.  It is easy to make.  Click  here  for the recipe. For some reason, I have never liked store bought alfredo sauce.  It just is nasty tasting to me.  So I make my own white sauce.  It is super easy too.  Click  here  for my easy 3 ingredient alfredo sauce recipe. HOMESTYLE HOMEMADE CHICKEN SOUP What do you do when your husband is snoring and hacking all night?  Well, to his benefit he was snoring because his nogging was stopped up.  He was hacking due to the congestion.  Poor fella could not help it.  Well, this is what I do, I make my man homemade chicken noodle soup.   I am lucky that I have so many ingredients in my pantry that this was an easy meal to make for him.  Goes back to  meal planning .  I try really hard to have what I think of as essentials at hand.  It makes it easier on days like today when it has rained and/or sleeted all night long.
