STUFFED PEPPERS ~ MEXICAN STYLE

I love stuffed peppers.  The best thing about them is you can stuff em with just about anything you want.  This is one of my favorite ways though,  I love Mexican food so why not stuff your peppers with a bit of Mexican?   Best thing is it is a simple recipe.  You need some peppers.  I cut mine in half and de-seed them so I can lay down my peppers and fill them.  I just find that easier than taking the top off an entire pepper and stuffing it that way.   You also need some type of ground meat.  Seriously any kind will work, here I used ground beef but you can use ground turkey, chicken or even pork.  All you need to do is brown your meat and add  taco seasoning to the mix with a bit of water. The next step is the fun part because you get to be creative.  You can add just about anything but in these, I used black beans, salsa and corn I canned myself, plus some Spanish rice I made in my pressure cooker.  The rice was left over from the night before.  Great way to us

VODKA CUCUMBER SPA DRINK RECIPE

I promised some friends I would post this recipe on my blog.  Sorry guys, it took so long.  My father passed away recently and to be honest, I had no desire to do much for a couple of weeks.   I can not take full credit for this recipe. Wish I could because it is such a wonderful drink.  I must admit that, so no one thinks I came up with it totally by myself. A couple of summers ago I took my daughter and my grandson to Florida.  What a great vacation.  While there at 2 different places I had a version of this drink I am calling The Spa Drink.  By NO means is this a non-alcohol drink. Just needed to get that out there.  Since that trip was very special to me I wanted to share this drink with all of you.  Plus it is getting ready to warm up here in the South. UPDATED: SOURDOUGH BREAD WITH A POTATO STARTER

I love sourdough bread.   Especially warm from the oven with some butter. It is so easy to make with a starter.  I use a potato flake starter.  You can make your bread in many different shapes.  You can make it crusty.   You can use different flour mixes.  You can add garlic, spices, cheese, olives, well you get the picture. You can make cinnamon rolls or raisin or cranberry bread.   Again the list goes on and on.  I know I used a lot of "you" there but you really can.   Potato Flake Starter Recipe 1 Cup warm water around 105 degrees (too hot will kill the yeast) 1/2 C sugar 1 packet of dry yeast 3 level Tablespoons of potato flakes Directions In a small bowl add all ingredients and mix well.  I keep mine in a quart canning jar with plastic wrap on top with a couple of holes poked into the plastic wrap.  Let that sit for 2 days then feed your starter How to feed your starter 1 C of warm water 1/2 C sugar 3 T potato f

My husband use to travel a lot for his job.  A few summers back, well more like 5 summers ago he traveled to Up State New York, which by the way I loved. Since we both enjoy going out to eat at local joints when we travel, he always makes sure to find a locally owned place for his meals.  In Geneva, he found this little joint across from his hotel that really looked like a hole in the wall.  When I traveled with him to Geneva we did not go into the restaurant but now I wish we had.  He found these awesome Italian stuffed peppers that he went on and on about.  The owners or it might have been his son was nice enough to give him the recipe.  Which of course he shared with me.  SCORE!!!!  These are truly amazing peppers.   These are Tuna and Anchovy Stuffed Cherry Bomb Peppers.  They are not from the gentleman in New York but my own recipe. Have you gotten on the bandwagon with sriracha?  Most people have.  If you notice in the grocery store sriracha is added to all kinds of products.  You have sriracha mayo. sriracha ketchup, sriracha salsa, sriracha chips, sriracha peanuts and even sriracha bloody mary mix.  I think you get what I am saying that sriracha has really hit it big with people.  Sriracha is a yummy spicy red sauce that you can add to almost anything when you are cooking.  One summer I had so many peppers I did not know what to do with them. In my research, I found a recipe for sriracha.  You know me, I thought why not.  Plus have you ever looked at the price of sriracha?  It is pricey for a small bottle, so why not make it at home where you know what you are putting in your condiment.  If you grow your own peppers you will know if they are organic or not.  We garden with no pesticides so everything we grow is organic.  It really is easy to make.  You need some peppers.  I do not use a specific pep

I can hardly believe it is already March. We woke yesterday to howling winds, like something out of a scary movie.  With the wind roaring it made me think of the saying, in like a lion out like a lamb. One thing is for certain March has started like a Lion.    It also reminded me of Winnie the Pooh and the Blustery Day.  Today is a very windy day.  I love Winne the Pooh.  Windsday.... Although today is not Wednesday it Windsday.   As spring approaches I start to make plans for my beautiful garden, what we are going to grow and start my seeds.  I enjoy both my gardens but my herb garden is such fun.
