SAUSAGE STUFFED ZUCCHINI BOATS

If you have ever grown squash you know how easy it is to overlook and totally a zucchini or yellow squash.  All of a sudden, you have a monster zucchini and you are thinking what the heck?  When this happens to me I normally make stuffed zucchini boats.  I have to be honest, I make up the recipe as I go so hardly will you get the same taste or flavor but today I decided to take pictures and notes so I could have a real recipe and share it with all of you.   Scott loves when I make them.  It is a nice meal.  I normally make them vegetarian.  Today I decided to use sausage instead.  Since I love Italian food, I am going with that concept here.   I used pork sausage in this recipe.  First, brown your meat. I also used the  spaghetti seasoning mix  I made to give it more flavor.  I love that recipe.  Hope you will check it out. While the meat is browning take your zucchini and cut it in half. Remove the seeds and microwave until they are just tender to the touch.

DIY SPAGHETTI MIX SEASONING

I love to make my own seasonings.  I love the fact that you can control how much sodium is in stuff.  Plus you can adjust to your own taste.  If you want some heat you can add dried pepper or ground pepper powders.  We like heat in our house but I did not add it to this recipe.  A while back I made Mississippi Pot Roast and while it was good it was just way too salty.  Scott felt the same way.  So, I made my own ranch mix .  This allowed me to cut the salt which made my next Mississippi Pot Roast much better.  I have made other spice seasoning mixes before but that was really out of necessity because I did not have a mix packet and really did not feel like running out to the store.  However, in making the Mississippi Pot Roast it really taught me a lot about just how much sodium is in pre-packaged seasoning mixes.   Today I am making Sausage Stuffed Zucchini Boats and I decided to make it Italian style.  Which means I need to make a spaghetti seasoning mixture.  AND I thought

AWESOME PICKLED SUMMER SQUASH

I found this recipe years ago and have been making it ever since with the abundance of our yellow squash each summer.  I can not remember where I found the recipe but it was online.  I have adapted it because I felt the vinegar was too overpowering.   As you guys know I love summer type salads.  I can make a serious meal out of a few salads.  As I did last night, all I had for dinner was smoked turkey salad,  bean salad , and  Greek salad .  Nothing quite like a cold salad to cool you down from the brutal heat outside.   There is a heatwave hitting some states this weekend so why not make some type of refrigerator salad?  You could make  pasta salad ,  corn salad , cucumber salad or this, summer squash salad. I remember the first time I made it.  As usual, I made it the day before serving.  A bunch of us were invited to a friend's house for lunch and I had this made so I took it there for people to enjoy.  Everyone loved it.  Nice, score another HIT. EASY CROCK POT BLUEBERRY BUTTER

It is finally blueberry season.  I always look forward to picking my own blueberries from our bushes but it is a love-hate relationship.  I love them and I love cooking with them but it is full of hard, sweaty, bug bites, and just downright sticky work.  Between the darn mosquitos, birds, squirrels, and bunnies I really do not get many blueberries.  For the last 3 years, they have not been netted so I have to deal with those peaky varmints eating my big beautiful berries.  The birds for the last 2 years have been really nasty to me.  They literally dive bomb me for MY berries.  Yes, they are mine not there's but they think otherwise.  Then this year the squirrels have been munching away at them.  Thus, the love-hate relationship.  No one helps me pick them so it also gets very frustrating for me.  Every year people tell me how much they love blueberries but no one comes to help pick them.  I keep telling myself if I just get enough of them to make blueberry butter, blueberry j

DELICIOUS KIND OF GREEK SALAD

Friday, Scott called me and asked me to get a turkey out of the freezer and put it in a pot with water so it could thaw because he wanted to smoke it on Saturday.  He loves to use his big green egg on the weekends and have friends over. Plus, Scott is so good at smoking about anything he puts on his egg.  It comes out finger licking good.  We invited friends over and I made the  bean salad , cut up some golden honeydew melon, and made the  adult boozy ice pops .   Saturday while we were sitting out on the back deck Anna mentioned a salad she makes and pulled it up on Pinterest.  I did not get the recipe per say but I did see what veggies were in the salad.  As we were sitting there talking Sophie said it really sounds like a Greek salad.  While I agree, for the record in case another Greek read this I will state it does not include lettuce or feta, however, I believe if you wanted to use this as a base for a Greek salad it would be delicious.   Here is my beautiful friend Sophi
