BALSAMIC GRILLED CAPRESE CHICKEN


I am always on the lookout for new and exciting recipes.  Especially chicken recipes.  You can do so much with chicken.  This recipe proves that.  I love balsamic vinegar and for some reason, I just have always loved it on chicken.  However, this recipe kicks it up a notch by not only marinating your chicken in a homemade balsamic dressing but by making a balsamic reduction and drizzling this over chicken that you have topped with mozzarella cheese and sliced tomatoes.  

First, you make your balsamic marinade.  I like thinly sliced chicken for this recipe.  I marinade my chicken in a ziplock bag for at least 2 hours but overnight is even better.  

You can do this in the oven but the grill just makes the chicken melt in your mouth.  

Slice your tomatoes and mozzarella.  


Right before you chicken is totally cooked, add the cheese and tomatoes. 
You want the cheese to melt.  Drizzle with the balsamic reduction.


BALSAMIC GRILLED CAPRESE CHICKEN

Ingredients
  • 1 pound thinly sliced chicken
  • 2 to 3 tomatoes
  • Sliced mozzarella cheese
Ingredients for marinade
  • 2 tablespoons olive oil
  • 4 tablespoons balsamic vinegar
Mix together and pour over chicken and marinate for up to 12 hours.

Ingredients for balsamic reduction
  • 1 cup balsamic vinegar
Pour vinegar into a small saucepan.  Bring to boil and then reduce to a simmer.  Allow cooking until it reduces in half and thickens.  

Directions
  • Grill marinated chicken until almost done.  Add cheese and tomatoes to the top of chicken.   Finish cooking chicken and allow the cheese to melt as it cooks.  Drizzle with balsamic reduction.  
This is a really good meal.  It is fast and fairly easy.  You will not use all of your balsamic reduction which is good because you will have it for use later.  You can use it on ice cream and strawberries.  Drizzle it over meat or roasted veggies.
