LEFTOVER FUN



Growing up I did not enjoy having to eat leftovers.  It took me going to college to appreciate them.  I have to say though here lately I have reverted to my childhood and do not care much for leftovers again.  Maybe it is because it is hard to cook for 2 or just maybe when we cook we make way too much.  

I am not a big beef eater.  Really not too kine on any types of meats on a regular basis.  I prefer seafood and vegetables.  I eat more chicken than beef.  BUT when I crave beef I just have to have it.  

This past Friday we went down to Matt and Brooke's house to hang out and have some longhorn burgers, thanks to our friend Jared.  I really was not craving beef of any kind but when Matt dropped by and then called Jared about getting some ground meat my mouth started watering.  His Longhorn meat is oh my goodness smack my mom good!!  

Saturday we worked in the garden.  Scott more then I.  I cut the fingertip of my index finger on my right hand.  Try doing something with a cut index finger on your prominent hand.  Everything I did something the cut would break open and I would drip blood.  LOL  We were trying to get everything completed because we were going back to Matt and Brooke's for another get-together.  I think we finally made it around 4 pm.  This time Matt had a tenderloin which he cut into filet and we had Longhorn steak and more burgers.  Scott did the cooking. 

Sunday rolled around and it was Father's Day.  I had a Standing Rib roast and some boar ribs out to cook.  Well, for Scott to cook on the big green egg.  More beef, right?  Can you say I was just about sick of moo cow at this point?  Do not get me wrong it was good but gracious we had beef and ribs leftover although we had invited people over not as many as we would have liked came.  Which left me with tons of food and Scott leaving for Vermont on Monday.  

I froze the ribs but kept the prime rib (Standing Rib Roast) out.  Needless to say, I did not want beef this week.  As you can tell I made crab cakes on Monday.  On Tuesday I made a bean salad and guacamole shrimp salad.  

Today I knew I had to eat some beef but I had to re-invent it to make it sound good to me.  I thought why not make some au jus and make a grilled onion to go with my prime rib sandwich.  I did not make the au jus because I had so much juice from the onion.  See all that wonderful yummy juice.  If you have not tried out this recipe you seriously need to.  



So with a little imagination, I re-invented my leftovers and truly enjoyed them.  Now I am thinking about a steak salad for dinner.  

All I did was warm the prime rib, put a bit of mozzarella on top, added half of the onion and dripped the onion juice on that.  Yummy good!
