STEP BY STEP LOW SUGAR BEST EVER STRAWBERRY JAM


I made one of the best strawberry jams earlier in the week.  I can not wait to share it with you.  Give me a day or two and check back.

This recipe is by far the best one I have made yet.  Click here for more strawberry jam recipes.  I like the fact that you can taste the berry flavor.  In a lot of strawberry recipes, the sugar overwhelms the flavor.

This recipe came about because we needed freezer space.  I had 3-gallon bags of strawberries from our small patch frozen.  I was unsure how they would turn out when making jam but they were just fine.  

Each bag was around 5 cups of berries.  Since they were frozen this included the juice.  Do not throw out the juice.  You need this for making the jam.  



I put the thawed strawberries into a large saucepan.


Slowly warm the berries and mash them up.


Add lemon juice and sure jell.


Bring to a rolling boil (a boil that you can not stir down) and add sugar.  I add half then allow that to melt then add the other half. 


Bring this back to a rolling boil for one minute.  Fill sterilized jars with jam.



Add lids and rings.  Water bath can for 10 minutes.  


STRAWBERRY JAM

Ingredients
  • 5 cups strawberries
  • 1 pack of reduced sugar sure jell
  • 1/4 cup lemon juice
  • 3 1/2 to 4 cups sugar
Directions
  • If using fresh berries wash, hull and slice.  If using frozen thaw and mash up.
  • Place berries into a large saucepan on medium to high heat and add lemon juice.  Heat for a few minutes and add sure jell slowly so that it dissolves easily.
  • Bring to a boil, stirring constantly.  You can mash up your berries as they cook to the desired consistency.  Bring to a rolling boil and add sugar.  Half at a time.  Allow sugar to melt before adding the other half.  Bring back to a rolling boil for one minute.
  • Pour jam into sterilized jars.  Water bath can for 10 minutes.
This should make 8 half pint jars.  

I have to admit it was nice making jam in the middle of winter.  Plus an added benefit is this recipe is truly amazing.  It is sweet but not so sweet that the sugar overpowers the strawberry flavor.
