INSANELY DELICIOUSLY SEARED TUNA STEAKS

This recipe is seriously insanely easy and so very delicious.  I love ordering Seared Ahi Tuna as an appetizer when I go out to dinner but I never will do that again after making this the other day.  It was so economical to make.  I have to say my tuna was frozen.  However, it was wild caught and sushi grade.   It is so easy to make and does not take many ingredients.  First, make your marinade.  Love this because it is only 2 ingredients.  It is olive oil and soy sauce.  I use reduced sodium soy sauce. Once you have your marinade mixed together all you do is combine the tuna with it in a bag and allow it to marinate for at least 30 minutes but longer if you have the time.  Up to 24 hours.   We use a lot of cast iron when we cook and this is really perfect for this recipe.  Only thing is you must be careful on heating your cast iron slowly so you do not warp your pan.  Also, the cas...

MARINATED TOMATO AND CUCUMBER SALAD~A SUMMERTIME TREAT

What a great salad to make and super easy to toss together.  I made this for Easter.  I am thinking when my cucumbers and tomatoes are coming in from the garden it will be so much better.  Nothing like fresh garden vegetables to make a recipe even better.  That is why I put A Summertime Treat in the title.   All you need is some cucumbers, tomatoes, onions, extra virgin olive oil, red wine vinegar, salt, and pepper.  It is that easy.  Well, of course, you have to slice, dice and mix but otherwise it is that easy. Making this I used grape tomatoes, English cucumber, and I chose a red onion because for some reason I like them in salads.  The small bite they have enhances this salad.   The dressing for this salad is so simple.  All you have to do is add some good EVOO and red wine vinegar.  I do not mix it separately, I just add it straight into the bowl with the vegetables.  I like garlic so I add a bit of...

IT'S NOT YOUR MAMA'S MACARONI SALAD

Let me start by explaining the title of this entry.  I have never been a huge fan of macaroni salad.  Yep, I just admitted that.  Well, it's true.  I don't know why because here in the south it is a staple at all kinds of get-togethers.   I mean seriously there is always potato salad and macaroni salad.  I think it goes back to family reunions.  It was always there and we had our family reunions on the 4th Sunday of June every year.   Think about that.  June is flippin hot.  While having a cool meal is the best in hot weather it is not when you are having your reunion at Smoot Park picnic style. CHICKEN LOMBARDY~KIND OF A COPYCAT BUT WITH A SPIN

Well, I had a major oops on my phone today.  I have no clue what happened.  When I cut it on it was like I had to reset everything on my phone as if it was new.  Of course, my heart is dropping because I had so many pictures for the blog on my phone.  As I was going through the procedure to set up my phone it asked something about my SD card.  All I can say is thank goodness I had purchased a mini SD and inserted into my phone.  If I had not I would have lost all my picture and just about everything on my phone.  I guess that is what I get for waiting several weeks to make this post.   This recipe has the makings of something deliciously spectacular.  You take thinly sliced chicken, add some sauteed mushrooms, a couple kinds of cheese, and a delicious wine sauce and you have something mouthwatering.  I added some sun-dried tomatoes and garlic to kick up the recipe going around online.  Throw in some herbs and you h...

FUN FACT FRIDAY~APRIL 5, 2019

It is Friday, so you know what that means.  It is fun fact Friday!!!  Believe it or not, I rack my brain on what to post.  There are all kinds of fun facts out there.  Today this one kind of hit me as a funny one.   Lemons contain more sugar than strawberries.   Wow who would have thought?  I mean lemons are tart and sour to the taste.  While strawberries taste so sweet and juicy.   My son use to ask for the lemon in my water when we were out to eat.  My grandson now does the same thing.  It always made me laugh that they would want to suck on it for a second.   Happy April folks and I hope you have a great weekend.
